-1packet sewai or vermicelli

-1 cup milk

-1/2 cup almonds

-1/2 cup pistachios


-cashew nuts

-Desi ghee

-1 cup sugar syrup

-Handful khoya

-Pinch of cardamom

-Pinch of saffron


Sewai also known as vermicelli is an eid ul fitr & eid ul zoha speciality that is prepared in milk with dry fruits like almonds, raisins, pistachios and cashew nuts. Sewai is an extremely popular sweet dish prepared in India. The use of khoya in the dessert enhances the taste of Sewai. The ancient visitors who often visited India endowed the country with the title of being the land of milk and honey.

How to prepare Meethi Sewai:

1)Blanch almonds and pistachios in water.

2)Boil the dry fruits for not more than 45 seconds.

3)Blanching not only makes the dry fruits soft but also makes it easy to peel off the skin.

4)Peel off the top skin of the dry fruits.

5)Slice the dry fruits and keep them aside.

6)Cook the sewai or vermicelli in desi ghee.

7)Once the sewai turns into brown, take it out.

8)Put the prepared sewai in the strainer and drain out the oil.

9)Add milk to an empty kadhai and boil it.

10)Once the milk comes to boil, add the sugar syrup to it.

11)Then add sewai to the milk and stir gently. Be careful not to break the sewai strands.

12) Cook it then the dish softens.

13) Add saffron and cardamom powder to the dish.

14) Now finally add almonds, pistachio, cashew nut and raisins to the dessert and stir well.

15)Add the final ingredient grated khoya to the prepared sewai and mix well.

16)Once the milk is completely absorbed, dry roast for few minutes.

17)Finally garnish the sweet dish with dry fruits and serve hot.
